Pepsin's only job is to digest proteins. When starchy carbohydrates are mixed with proteins in the same meal, Pepsin can't do it's job well.
Starches form a filmy barrier around proteins, blocking Pepsin. Undigested proteins move sluggishly through the intestines, burdening the pancreas & gal bladder, wreaking digestive havoc.
